Ingredients
- 200 g spaghetti
- 6 cloves garlic
- 100 ml olive oil
- 1 whole red chili pepper
- 0.5 whole lemon
- 5 g salt
- 1 pinch black pepper
- 10 g parsley
Method
- 1
Bring a large pot of water to a boil and add salt. Cook the spaghetti according to package instructions until al dente.
- 2
Press the garlic cloves with a garlic press and mince finely. Remove the seeds from the chili pepper and slice into thin rings.
- 3
Heat the olive oil in a large pan over medium-low heat. Add the minced garlic and chili pepper and gently fry for 2-3 minutes until fragrant, being careful not to let the garlic brown.
- 4
Drain the cooked spaghetti and reserve one cup of pasta water. Add the pasta directly to the pan with the garlic and oil.
- 5
Squeeze the lemon juice over the pasta and toss well. Add a splash of pasta water if needed to create a silky sauce.
- 6
Season with salt and black pepper to taste. Divide among plates and garnish with fresh parsley.
Tip from Garlicmaster: Low heat is essential: garlic that browns will taste bitter. A good garlic press ensures the flavor infuses better into the oil than minced garlic would.
