Low heat is essential: garlic that browns will taste bitter. A good garlic press ensures the flavor infuses better into the oil than minced garlic would.

Always use rice from the day before — fresh rice will stick and become mushy in the wok. And add the sambal only when the rice is almost done, otherwise the trassi will burn.
