Ingredients

  • 1400 g whole chicken
  • 12 pieces garlic cloves
  • 1 pieces lemon
  • 4 sprigs fresh thyme
  • 60 ml olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 200 ml chicken broth

Method

  1. 1

Preheat the oven to 200°C. Pat the chicken dry with paper towels and place in a roasting pan.

  2. 2

Arrange 8 unpeeled garlic cloves around the chicken. Press the remaining 4 garlic cloves and mix with olive oil, salt, and pepper.

  3. 3

Brush the entire chicken with the garlic oil. Cut the lemon in half and stuff it inside the chicken along with the thyme.

  4. 4

Pour the chicken broth into the roasting pan around the chicken. Place the chicken in the center of the oven.

  5. 5

Roast the chicken for 45-50 minutes until the meat is cooked through and the skin is golden brown.

  6. 6

Remove the chicken from the oven and let it rest for 5 minutes. The roasted garlic cloves are now soft and sweet.

  7. 7

Serve the chicken with the whole garlic cloves and the pan juices. The garlic can be squeezed out of its skin onto your plate.

Tip from Garlicmaster: Leave the garlic cloves unpeeled so they stay moist and develop a sweet flavor. Spreading the soft garlic from its skin onto bread is delicious.
