Ingredients
- 800 g turkey fillet
- 30 g butter
- 2 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 150 g dried cranberries
- 200 ml red wine
- 150 ml beef broth
- 2 tablespoon brown sugar
- 1 tablespoon balsamic vinegar
- 1 pieces cinnamon stick
- 4 pieces juniper berries
Method
- 1
Preheat the oven to 180°C. Pat the turkey fillet dry with paper towels and season generously with salt and pepper on both sides.
- 2
Heat the olive oil and butter in a large oven-safe pan over medium-high heat. Sear the turkey fillet for 4-5 minutes per side until golden brown. Set the pan aside.
- 3
Place the pan with the meat in the preheated oven. Roast for 20-25 minutes until the internal temperature reaches 75°C. Remove from the oven and let rest for 5 minutes under aluminum foil.
- 4
Meanwhile, prepare the sauce: place a pan over heat and add the red wine. Stir in the cranberries, brown sugar, balsamic vinegar, cinnamon stick, and juniper berries.
- 5
Add the beef broth to the pan and simmer the sauce over low heat for 10-12 minutes until it reduces and thickens slightly.
- 6
Remove the cinnamon stick from the sauce. Slice the rested turkey fillet into beautiful pieces.
- 7
Arrange the turkey slices on plates and pour the warm cranberry sauce over top. Serve immediately with mashed potatoes and vegetables.
