Ingredients

  • 800 g red cabbage
  • 2 whole apple (tart, such as Granny Smith)
  • 1 whole onion
  • 30 g butter
  • 250 ml apple juice
  • 60 ml red wine vinegar
  • 2 tablespoon brown sugar
  • 4 whole cloves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Method

  1. 1

Slice the red cabbage into thin strips. Peel and coarsely grate the apple. Mince the onion.

  2. 2

Melt the butter in a large pan over medium heat. Gently sauté the onion until golden, about 3 minutes.

  3. 3

Add the red cabbage and grated apple to the pan. Stir-fry for 5 minutes until the cabbage begins to soften.

  4. 4

Pour in the apple juice and red wine vinegar. Add the brown sugar, cloves, salt, and pepper. Stir everything together well.

  5. 5

Cover the pan and simmer gently over low heat for 35-40 minutes until the cabbage is tender. Stir occasionally.

  6. 6

Remove the cloves. Taste and adjust seasoning with salt and pepper as needed.

  7. 7

Serve warm as a flavorful Christmas side dish alongside your favorite main course.
