Ingredients

  • 500 g split peas
  • 2 l water
  • 1 pork knuckle or 300 g pork shoulder
  • 1 smoked sausage
  • 1 celeriac
  • 2 carrots
  • 2 leeks
  • 1 onion
  • 2 bouillon cubes

Method

  1. 1

Rinse the split peas and bring them to a boil with the water, meat, and bouillon cubes. Skim off any foam that rises to the surface.

  2. 2

Simmer gently for 1.5 hours, stirring occasionally.

  3. 3

Add diced celeriac, carrot, onion, and leek, and cook for another 45 minutes.

  4. 4

Remove the meat, cut it into small pieces, and return it to the pot. Add sliced smoked sausage.

  5. 5

Season with pepper and salt to taste. Pea soup tastes even better the next day.

Tip from Scoopd Kitchen · Dutch classics: Let the soup sit overnight: it will thicken and the flavor will deepen.
