Ingredients

  • 200 g dark chocolate (70%)
  • 150 g butter
  • 4 pieces eggs
  • 100 g sugar
  • 40 g flour
  • 200 g fresh raspberries
  • 20 g powdered sugar
  • 20 g butter for greasing

Method

  1. 1

Preheat the oven to 200°C. Grease four oven-safe ramekins or small cake molds with butter and place them on a baking sheet.

  2. 2

Chop the chocolate finely and melt it together with 150g butter in a double boiler over medium heat, stirring until smooth.

  3. 3

Whisk the eggs with sugar in a bowl until the mixture is light and creamy, about 3 minutes. Gently fold the melted chocolate into the egg mixture.

  4. 4

Sift the flour and carefully fold it into the chocolate mixture. Divide the batter evenly among the four molds.

  5. 5

Bake the lava cakes for 10-12 minutes in the preheated oven at 200°C until the edges are set but the center remains soft. The top may puff up slightly.

  6. 6

Carefully turn the molds out onto serving plates. Garnish with fresh raspberries and a dusting of powdered sugar.
